So, confession here, I LOVEEEEEEEEEEEEEEE cheese. Like it's an obsession. It's probably why I was able to transition into keto so easily. I also love potato, and in the beginning I struggled to find alternatives to mash potato until I discovered how to make mash with cauliflower. Now, I always have the skeptics claim they hate cauliflower, but trust me, you gotta try BETT3R KANTINAS cauliflower mash, and even more so, their rendition on an all time favorite comfort food, Shepherds Pie (Or if you're latino, "Tambor de papa" or "Meat Pie" for the rest of ya.
So, this isn't completely traditional, and we have played around with many variations, but it's absolutely my favorite. So if you're a culinary traditionalist, please press the x at the top right of your screen now.
Ok, so for those still with me:
For starters, it combines (like stated above) 2 of my favorite foods, cheese and "mash". Then, its adds another fatty favorite of mine, BACON!!!!!!! Now who doesn't love bacon. (Funny story, when I met my soon to be wife, she hated bacon. HATED bacon. I could never understand how someone could not like something so delicious. this story has an amazing ending where 5 years later, after much complaining and persuading from my end, I can come out and say she's a bacon lover!!!!! Glory be to the bacon Gods!!! )
To top it all off, we added two (Very thin) layers of cauliflower and cheese, sandwiched in the middle is delicious and fatty ground beef, all topped off by more cheese, sour cream and chives!
Now that I have you drooling, let's talk about my other favorites!
2. Fat Head Pizza- This stuff is amazing, super low carb and insanely delicious. Once you get the hang of the dough the sky is the limit. Load this puppy up with bacon, cheese, pepperoni, whatever! Here's a cool ingredients list for an amazing crust:
¾ cup shredded mozzarella cheese
olive oil to grease your hands
3. Keto Bacon Wrapped Meatloaf- Always a fan favorites, pair this with our cauliflower mash for an amazing combination:
¼ yellow onion, finely chopped
6 oz. ground beef or ground lamb or ground pork
2 tbsp heavy whipping cream
¼ tbsp dried oregano or dried basil
1⁄8 tsp ground black pepper
1⁄3 cup heavy whipping cream, for the gravy
1⁄8 tbsp tamari soy sauce (optional)
4. Zoodles! The craze that has taken over America is actually amazing. Pair it with some cheese, olive oils or fatty dressing in a salad for a hard core Keto meal. Here's my favorite Chicken Carbonara Zoodles
2 2⁄3 oz. bacon or pancetta, diced
1⁄3 cup heavy whipping cream
¾ oz. grated parmesan cheese
5. Chicken Wings- So this was a game changer for me. Make sure not to use vegetable oils when cooking though, I like to get a pan, toss some love oil and back for about 20-25 minutes. Garlic Parm is my favorite, adds the right amount of fat and the parm cheese adds some nice saltiness. Perfect combo.
